Selection of Hergo's sausagesHergo, slager met de koksmuts
The butcher with a chef’s hat since 1930. The tag line says it all.

Hergo & Ajax: "Before every European match [Ajax' physiotherapist] Muller  required to wear his lucky ski hat - and to supply [the team with] a special sausage, an osseworst from Hergo, the kosher butcher on the Beethovenstraat. Before Ajax's disastrous game against Dukla Prague, Muller's wife forgot to pack the lucky hat. And Hergo was closed, so there was no sausage either. Ajax lost 2-1, and to this day, some of the players blame Muller". Excerpt from the book Brilliant Orange, the neurotic genius of dutch football by David Winner. More about Dutch football. Hergo butcher (and chef) Amsterdam (Oud-)Zuid: Beethovenstraat 49, Maasstraat 53, Buitenveldertselaan 40 and Buitenveldertselaan 166. Amstelveen: Binnenhof 6.

Cows at Spaarnwoude grassland. Siem van de Gracht
The best biological butcher in town since 1966 (also read: best organic shops in amsterdam). All meats come from Dutch soil. For example, the beef comes from the Limousin cows who graze on the grasslands of Spaarnwoude, west of Amsterdam. Visit this natural recreation area and try spotting one of these cows!
Siem van de Gracht, Elandsgracht 116a, Jordaan, Amsterdam.

Kaddour Google Street view during World Cup.Slagerij Kaddour

First he was a butcher, now the name equals an Amsterdam lunch hotspot, excellent price-quality take-away shop and exclusive catering service. The butcher shop has been open for nearly 50 years.

I'd like to recommend this poultry specialist in Amstelveen. http://www.wagenaarpoelier.nl/
It's also possible to order leg of lamb or beef roast in advance. Personally, I prefer non-halal lamb and think this butcher offers a great service.
